Quinoa (KEEN-wah) is well on its way to being dubbed supergrain of the millennium. High in fiber and a high-quality protein similar to that found in meat, this grain—a diet staple of the ancient Incas—cooks up like rice and has a mild flavor similar to couscous. Quinoa can be found in health-food stores and many supermarkets.
My Recipe
I cup quinoa
1 larger cucumber chopped
1 tomatoe chopped
Juice of a lemon
A few cloves chopped fresh garlic
Hand ful of fresh parsley chopped
Tablespoon of extra virgin olive oil
Sea salt and black pepper to taste
Italian dressings
Bring quinoa to a boil with 1 1/2 cup water turn heat on low simmer until water is evaporated and quinoa tender
Add all ingredients sir a few times and
Dash Italian dressing
Quick and easy healthy meal
This is great with hummus
On grilled wraps, pita bread and or pita chips
Awesome with garlic roasted chicken or lamb chops
